Introducing Kasper Christensen, who’s Danish roots have led him to Sydney Opera House, and George Sideris. Kasper is heading up the Sydney Opera House culinary team with Head Chef George Sideris looking after Portside Sydney Opera House. Kasper and George have created a menu that is contemporary, clean and fresh by bringing only the best flavours of country to your plate.

Just like Jørn Utzon, Kasper has a Nordic sense for nature and local produce that ties in with his food creations. George’s philosophy on food is using the best quality ingredients and preparing them simply with an emphasis on Australian seasonal produce.
